PESTO
INGREDIENTS
2 CUPS BASIL LEAVES
3 CLOVES OF GARLIC
1/2 CUP PECORINO ROMANO CHEESE
1/2 CUP TOASTED PINE NUTS
1/2 CUP EXTRA VIRGIN OLIVE OIL
1/2 TEASPOON SALT
Wash basil in cool water
Shake off water and lay each leaf to dry on papertowels
When basil dries (after an hour or so) throw into food processor
Preheat oven to 350
Add however much olive oil (2tbps -1/2 cup) to the processor and mix until the basil is all chopped
Throw pine nuts into oven on a baking sheet
Whatch the nuts for about 10 minutes and make sure they dont burn
After they are lightly toasted throw them with everything else into the processor
Mix for a few minutes until everythings distributed
